Bissara Soup Recipe – Ingredients:

  • 2 cups of dried fava beans (or dried peas)
  • 4 cloves of garlic
  • 1 teaspoon of salt (or to taste)
  • 1 teaspoon of cumin (plus extra for garnish)
  • 1 teaspoon of paprika
  • 4 tablespoons of olive oil (plus extra for serving)
  • ½ teaspoon of ground hot chili (optional)
  • Enough water for cooking


Preparation Steps:

  1. Soaking the beans:
    It's recommended to soak the beans overnight to reduce cooking time.

  2. Initial cooking:
    After draining, place the beans in a pot with the garlic cloves and cover with water. Bring to a boil.

  3. Simmering:
    Reduce the heat and let it simmer for 45 minutes to 1 hour, or until the beans are very soft. Add water as needed.

  4. Blending:
    Use a hand blender or a regular blender to blend the mixture until smooth and creamy. Adjust the thickness as desired.

  5. Seasoning:
    Add salt, cumin, paprika, and olive oil. Let it simmer for a few more minutes.

  6. Serving:
    Pour the bissara soup into bowls, drizzle with olive oil, and sprinkle with cumin and paprika. Serve hot with Moroccan bread or barley bread.
